Weight: Typical flat-top stove weight limits are 50-60 pounds. The weights listed are empty. Add 20–30 lbs for water and jars in the 910–925, and 40–50 lbs in the 930 and 941.

Correct! All American Canners use a precision-machined metal-to-metal seal. There are NO rubber gaskets to wear out, replace, or fail. Simply lubricate the rim as instructed, and your canner will seal perfectly for decades. Many customers use 40+ year old canners.

A pressure canner is larger and maintains precise pressure levels needed for safely preserving low-acid foods like meat and vegetables. According to the USDA, it must hold at least 4 quart jars to qualify as a safe canner. This Model 921 holds 7 quarts. You CAN cook in a canner, but you CAN'T safely can in most pressure cookers.
